Pancakes topped with blueberry compote
How it started
Do you have any plans for the weekend? Yeah, we didn’t either. It was just going to be laundry, Netflix, watch the snow falling from our window, then shovel the snow. Not a particularly exciting weekend. But who says that you can’t liven things up a little? We can still have Sunday brunch at home, no? We were certainly going to give it a try!
How we did it
What’s Sunday brunch without pancakes? Hmm, just pancakes alone isn’t enough to elevate things to Sunday Brunch status though...💡! Now if we added some blueberry compote and a little bit of powdered sugar, well then we have a thing of beauty!

First we made the blueberry compote on Saturday night and for that you'll need:

- 4 cups of frozen blueberries (this seems like a lot but it will reduce)
- ½ teaspoon of vanilla extract
- ½ half a teaspoon of kosher salt
- ⅔ cups of maple syrup
- 1 cup of Demerara brown sugar (or any brown sugar will do)

The steps were very simple.

1. Bring all ingredients to a simmer on medium heat.
2. Continue simmering on low heat for an hour.
3. You’ll know it’s done when the bubbles start getting bigger, slower and louder.
4. Cool to room temperature.
5. Cover and store in the refrigerator overnight.
It'll be thicker but still a little runny - all the better to absorb into the pancakes!
Then we made the pancakes on Sunday morning and for those you'll need:
- 1 ½ cups all-purpose flour
- 2 ½ teaspoons baking powder
- 1 teaspoon salt
- 2 tablespoon white sugar
- 1 ½ cups milk
- 1 egg
- ¼ cup unsalted butter, melted and extra for pan frying
- dusting of powdered sugar for extra sweetness on top and that touch of elegance

There is no special trick to making pancakes You just need to:

1. Mix together flour, baking powder, salt and sugar in a bowl.
2. In a separate bowl vigorously whisk egg until frothy then add milk and melted butter.
3. Slowly incorporate the dry mix into the egg and milk mixture.
4. Let the batter rest for about 30 minutes in the refrigerator.
5. Pan fry in a liberally buttered pan over medium-low heat.

Then all you need to do is enjoy the fruits of your labour! The batter will be denser/thicker than you’d expect but the pancakes will be thick and fluffy when done.

How it turned out
Check out the finished product! The pancakes not only looked scrumptious they were truly a thing of heavenly delight!
